Check this out! Paleo Stuffed Peppers that are a meal all by themselves!
Ingredients:
3 bell Peppers, 1lb ground whatever you want (I like Buffalo!), 1/2 onion, 1/2 can crushed or chopped roasted tomatoes, 6oz
sun-dried tomatoes, 1/4 head cauliflower, 1/2 packet sloppy joe seasoning.
Directions:
This whole set-up takes about 1 hour and will stuff 3 big peppers so plan accordingly and these are honestly even better as
leftovers so make plenty. Start by browning the meat in a large skillet. Cutting the tops off the peppers and remove
the guts. In a large pot start boiling the peppers for 10 minutes to make them tender (remove them from the water after
10 minutes and place them upright in a shallow baking dish). Drain the excess fat off the meat when brown, return it to the
skillet and chop the onion and add it in. Add in the tomatoes and sloppy joe seasoning and maybe a little water so it
isn't too thick. Turn the heat down on the skillet and prepare a medium pot with boiling water. Finely chop the
cauliflower into what I call "Cauliflower rice" and add it to the boiling water. Reduce heat to simmer, cover
and cook this way for 10 minutes. Strain from the water and add it to the meat mixture. Stir everything up well,
preheat the oven to 350 degrees, get your pan of peppers and stuff them with the meat and cauliflower rice mixture until they
are overflowing. Bake for about 15 minutes and experience Paleo perfection!
*I recommend
playing with the spices on the sloppy joe seasoning. I do something different almost every time and it hasn't turned
out bad yet!*
